The Japanese spiny lobsters caught in Goto are proudly known for their impressive size, with some weighing over 1 kg. This size is 3 to 5 times larger than typical lobsters, making them truly exceptional. The complex and swift currents nurtured by the numerous islands cultivate these exquisite, meaty lobsters. At ray dining, we offer only the finest hand-selected wild-caught specimens.

Longtooth Grouper (Ara)
The legendary luxury fish

The “longtooth grouper”, a rare fish that is seldom caught. Locally known as “Ara”. It inhabits complex rocky reefs and is said to live for several decades. Weighing over 10 kg, sometimes even exceeding 40 kg, it’s more like premium “meat” than fish. Pufferfish and sea bream can’t compare. By purchasing whole fish, we can offer you a variety of rare cuts to enjoy without waste.

Goto Beef
Rare beef not found in markets
Year-round
Goto beef is premium Japanese Black cattle raised in the pleasant sea breeze and refreshing climate of Goto. It has a good balance of lean and fat, with beautiful marbling.
Due to the limited number of cattle and many direct buyers, it’s never distributed to markets. Through low-temperature roasting and other methods, you can fully savor the meat’s inherent umami.

Shochu
Hotel Original Goto Sweet Potato Shochu with Camellia Yeast
We use natural yeast extracted from the flowers of wild camellias that grow abundantly in the Goto Islands during the fermentation process. It has a gentle sweetness derived from rice koji, and when mixed with hot water, it becomes incredibly smooth. This sweet potato shochu, born from a collaboration with Goto Islands Distillery, is exclusively sold at our hotel.
