Summer Delicacies Nurtured by the Goto Sea
Special Kaiseki Featuring Wild Striped Jack and Goto Beef

This summer-exclusive kaiseki course features wild Shima-aji (striped jack) from Kishuku in the northern Goto Islands, prepared in three styles: sashimi, sake-steamed, and Saikyo-yaki. Shima-aji is a luxury fish often called the “King of Horse Mackerel” for its beautiful appearance and refined flavor. Among them, wild Shima-aji is particularly prized for its elegant fat content, translucent umami, and clean finish.
The menu also features an abundance of ingredients representing Goto in summer, including Hagatsuo (bonito) from Tomie, Goto pike conger, sea urchin, abalone, Goto beef, and Goto-grown “Natsuhonoka” rice. This is a special kaiseki course that can only be realized on this island during this season, where the blessings of the sea and land resonate together.

We offer a one-night-only premium dinner, featuring seasonal ingredients carefully selected by Chef Yamamoto himself at the morning market on the day. Each dish is carefully prepared with the chef’s sensibility and skill, using the “bounty of the season” nurtured by Goto’s sea and land. Please fully enjoy the luxury of “that day” only.

Only about 400 Goto cattle are shipped annually, and are rarely seen on the market. The meat quality, which is nurtured by the rich nature and mineral-containing pasture unique to remote islands, is known as the “Maboroshi no Brandgyu (The Illusive Brand Beef)” among those in the know. Please fully enjoy the luxury that can only be tasted because it is so rare with this special plan.
The content is the same as the signature dinner, but we will increase the amount of Goto beef steak, Goto beef sukiyaki, and other Goto beef dishes on the day.
